Peanut butter cookies, 15K fuel, and surprise giveaway wins

Hello everyone Party smile. I hope you’re all well. Right now, I’m getting my work done so I can go lunch and to the bank this afternoon with Clay (we’re planning to join a credit union). We might go look at homes later too- pretty sure riding around neighborhoods is one of the most fun parts of the home buying process, right?

I’ve been sleeping in more this week (yeah, 7 counts as sleeping in for me…) to get extra rest after the half marathon and before the Charlie Post 15K tomorrow. About 400 people are signed up for the 15K tomorrow, and it’s the USATF 15K State Championship so I heard the other runners would be fast. Personally I didn’t know adults trained for state championships, that the USATF had them, or that 15K was a distance people regularly raced. Guess I’m learning something new every day Laughing out loud.

Unfortunately, I didn’t win my company’s Facebook quirky photo contest. Embarrassed smile My photo got the most likes by a landslide, but apparently there was some rule in the e-mail about wearing a goofy hat in the photo (the page had several other photos where people weren’t wearing hats). I saw it in the e-mail after the fact, but the rules weren’t on Facebook. It’s one of the things you miss out on working from home- there’s no flyers in my breakroom (err, dining room?) advertising contests and no coworkers to remind to put on a quirky hat before taking a picture.

What I’m trying to say is… you miss out on office nuances when you’re not there, even trying to be an active part of your company. At least people know I still work for my company and it was a pretty cool photo. Who needs a goofy hat when you have a race bib with your name on it? Flirt female

However, I *did* win a contest from CLIF bars, one of the 12 days of CLIFmas prize packs. They sent me 3 cases of CLIF bars- all awesome flavors, a water bottle, a gear bag, a calendar, and stickers. I really like CLIF bars for snacking on in the car on my way to run or with fruit for breakfast. Coconut Chocolate Chip is the best- but I love them all, especially heated in the microwave for about 15 seconds, it’s like dessert for breakfast.

I received the package in the mail on Tuesday.

Anyway… CLIF has great giveaways- so if you ever see their contests, you should enter. I guess there were pretty good odds or either I was really lucky.

In honor of National Peanut Butter day, which was yesterday, I baked some super-easy 3 ingredient peanut butter cookies. They were inspired by this recipe, but I used Planter’s NUTrition banana granola nut peanut butter and left the vanilla extract out. The only ingredients are 1 cup PB, 3/4 cup sugar, and 1 beaten egg, mixed and plopped on a baking sheet for 12 minutes at 350. They are wheat-free and gluten-free if you’re into that (I’m not- I love my carbs, but these have plenty of those too).

They baked while I ate lunch- and were hot, ready, and delicious as soon as I finished lunch. Clay’s gaming friends really liked them too. They have a subtle banana flavor, especially toward the end of the cookie.

      I ate part of the cupcake last Friday night, but only a few bites. I ate a whole one the night before a race once, and it spiked my blood sugar so I couldn’t sleep and felt really spazzy that night. So, whatever sweets I do the night before, I keep it simple, only a little bit!

    i wanna try that recipe. Nice and simple. Often times i find recipes for foods that look good but get immediately turnt off when i see A LOT of ingredients.

      Yeah, me too. This was so simple, I was able to mix everything up in 5 minutes, and it cooked while I ate lunch. Multi-tasking is great. I hate recipes that have 10+ ingredients or include things you don’t have in your kitchen. If I have to make a special trip to a special store for it, I’m not making it.

      Plus, you can add ingredients to the cookies (chocolate chips maybe?) or use different peanut butters to make other variations of it. I just don’t recommend using the all-natural peanut butter with the oil at the top because that would make the cookies hard to hold together.

    Love Clif bars. During the holiday season they have Gingerbread and a Pumpkin flavor. YUM! GL with your race. 🙂

      It’s okay that I didn’t win the work contest. I did get the most likes and had an awesome picture :). Pretty sure between me eating the bars for breakfast and Clay taking them to work, we will go through those cases pretty fast.

  8. Oh man, those white chocolate mac nut clif bars are THE BOMB. I used to eat them all the time out in the field when I was working/hiking. So delicious! Jealous of your win! Clif is an awesome company!

      I hope so! My first 15K so insta-PR.

      I could imagine how many Clif bars I would eat in the field like you were! I am taking one to the race tomorrow bc I will have to get there early for parking, so it will be a nice little snack before I run or whenever I’m waiting to get out to go home.

  10. That’s awesome that you won the Clif contest, I’m always so unlucky when it comes to giveaways but I’ve won a couple times and it’s always exciting to get some freebies. I used to be a huge fan of the Clif minis for snacks but they must have changed the formula or something because I can’t stand them anymore. Some of the regular bars are pretty good though.

      I haven’t actually seen the minis. I’ve seen the kid’s bars though and they are great :). I haven’t had too many bars that I just didn’t like but Clif is one of my faves.

Oh wow congrats on the cliff bars I LOVE them, a few of my triathlete friends are sponsored by them and I get boxes free, but they don’t last very long hehe… Oh I love peanut butter, actually I have a weird after race thing some times where I put peanut butter on banana and sprinkle some chocolate on the peanut butter it tastes good and is really easy to do! Hope you get less sore after your half! 🙂

      Oh yeah, I was definitely a lot less sore today! I just needed 2 days off completely after the half for recovery, I guess. That’s so neat that your friends are sponsored by CLIF and get free boxes, I have always wanted to be sponsored by someone… heck even if I didn’t get anything free but the race entry, it gets expensive running all these things :). That sounds like a tasty snack too, love some PB.

      • Yay that’s great to hear! 🙂 I remember needing to take a while off after my first half although wait yikes it’s all coming back to me I wasn’t ready to race one and I got injured *eye roll* rooky mistake! :-/ Oh yes they are, but they are professional triathletes so they def need them… Yeah I use to think like that until I got sponsor offers and took it without much thought just from pure excitement then realized their products were not that great, so it was really hard to promote them, so now I am super careful which ones I accept and will only go for companies who I believe in that way it’s more mutual… I could definately be sponsored by a PB company whoooo never ending PB hehe… 🙂
