#8: Learning to Cook- Super Easy Vegetarian Chili

A few weeks ago, I wanted to try my hand at making super easy vegetarian chili.  Lately, I’ve been cooking on Sunday evenings and eating off of whatever I cook during the week, especially for lunches at work.  This works *really* well because it saves money that would be spent eating out, plus it helps me be more productive because I don’t sit around all morning asking myself what I’m going to have for lunch.

Not to mention, chili is high in iron and protein, and it tastes even better left over.  With the fresh green and banana peppers I’ve gotten lately from Clay’s grandparents’ garden, the chili had even more of a home-grown touch :).  In addition to the recipe, I added more vegetable broth, as well as banana pepper, extra green pepper, and carrots :).  So yummy!

So, I’m trying to figure out what to cook next.  It has to be fairly easy (since I’m still new at this and would hate to mess up something complicated), and vegetarian- or something that could easily be modified to be vegetarian.  Oh, and anything that results in leftovers and keeps me from going to the food court for lunch is great too!
